First, tomato slices are stacked on English muffin halves, followed by glistening bundles of sautéed spinach. Then comes the protein swap: pan-roasted Atlantic Sapphire salmon (raised in a sustainable aquaculture ecosystem, no less). Finally, globes of soft-poached, cage-free eggs are balanced on top. A scattering of fried capers lends a tangy taste, and microgreens add visual appeal. Hollandaise on the side is not so much a sauce, but rather a luscious, savory spread waiting to be slathered on the plate’s two colorful stacks.
