'Meat Geek' and butcher Tony Mata discovered a new cut of beef he calls the Vegas Strip Steak. He'd like to see it join the ribeye, porterhouse and filet on steakhouse menus.  He tells us about digging around cow carcasses searching for the best cut of beef.
