The involtini di prosciutto at Settebello’s is satisfying in a completely un-salad-like way making it one of the best salads ever to be had at a pizza joint. Crisp leaves of baby arugula and goat cheese are wrapped tightly in raw prosciutto, topped with shaved Parmesan, then drizzled with a balsamic reduction, so that each forkful is a combination of salty, sweet, tangy and peppery flavors. But the real un-salad-like magic comes in the satiating density of the arugula leaves, their peppery crunch juxtaposes the salty flavors and creamy textures of the remaining ingredients.
