This new Poblano eatery offers quite the dilemma: Should you devour the chanclas, mini-sandwiches of juicy shredded chicken and avocado sublimely drenched in a chile sauce made with chorizo? Or is the torta de pierna the right move, adobo-style roasted pork and smooth refried beans with more avocado? There’s also shredded beef and spicy sauce on fried bread, aka pelonas, or the grilled cheese with pico de gallo known as molletes. Tough choices. Maybe bring three friends. – B.R.

The dish: Taste for the border
